How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Prep Time : 11-15 minutes

Cook time : 16-20 minutes

Serve : 4

Ingredients for Brown Basmati Pulao Recipe

  • Brown Rice soaked for 1 hour and drain 1 1/2 cups

  • Carrots 1 medium

  • Cinnamon 1 inch stick

  • Cloves 2-3

  • Bay leaf 1

  • Cumin seeds 1 teaspoon

  • Carrots cut into ½ inch pieces 2 medium

  • Cauliflower separated into small florets 1/4 medium

  • French beans cut into ½ inch pieces 10-12

  • Green chillies slit 2

  • Salt to taste

Method

Step 1

Slice onions. Heat oil in a non-stick pan, add cinnamon, cloves, bay leaf and cumin seeds and sauté till cumin seeds change colour.

Step 2

Add onions and sauté till light brown. Add carrots, cauliflower, beans and green chillies.

Step 3

Toss well and add brown rice. Mix well and add 4 cups water and salt.

Step 4

Mix again and bring to a boil. Cover and cook on low heat till done.

Step 5

Serve hot.
