Ingredients for Breakfast Buns Recipe

  • Buns 4

  • Small onions 4

  • Eggs 8

  • Salt to taste

  • Red chillies , crushed 2 teaspoons

  • Black pepper powder 2 teaspoons

  • Fresh thyme a few sprigs

  • Oil 8 tablespoons

  • Olive oil 4 tablespoons

  • Medium tomatoes 2

  • Cheese 4 slices

Method

Step 1

For each portion, quarter 1 onion and put into a chopper and process. Add 2 eggs, salt, ½ tsp crushed red chillies, ½ tsp black pepper powder, a little fresh thyme and process again till well mixed.

Step 2

Heat 2 tbsps oil in a non-stick pan and place a round ring in it. Pour the egg mixture into the ring and let it cook.

Step 3

Halve 1 bun horizontally. Heat 1 tbsp olive oil in another non-stick pan and place the bun halves, cut side facing down, and toast till golden.

Step 4

Cut tomato into round slices.

Step 5

Place the base half of the bun in a serving plate, place some tomato slices on it.

Step 6

Gently remove the ring from the first pan and flip the omelette. Cook the other side similarly.

Step 7

Once the omelette is done, place it over the tomato slices. Place a cheese slice over it and cover with the upper half of the bun. Serve immediately.
