Ingredients list for Boxty (Irish Potato Pancakes)
- 2 medium Potatoes boiled, peeled and mashed
- ¾ cup Refined flour (maida)
- 2 medium Potatoes peeled, grated and squeezed dry
- for shallow frying Oil
- 1 Egg
- ½ cup Milk
- to taste Salt
- to taste Crushed black peppercorns
Method
- Heat some oil in a non-stick pan.
- Combine the mashed potatoes, grated potatoes, flour, egg, milk, salt and crushed peppercorns in a bowl and mix well into a batter.
- Pour a ladle full of the batter in the hot oil, spread out into half inch thick disc and shallow-fry till golden. Drain on absorbent paper.
- Serve hot.
