Bomras Tomato Salad

Toss blanched tomatoes with tamarind, jaggery, peanuts, garlic chips, and spices for a tangy and crunchy delight. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 400 grams tomatoes
  • 30 grams peanuts, crushed
  • 10 grams tamarind water
  • 10 grams jaggery water
  • 5 millilitres extra virgin olive oil
  • 5 grams black pepper powder
  • 40 grams fried garlic chips
  • 30 grams onion, finely sliced
  • 10 grams sesame seeds
  • 5 grams ginger
  • 5 grams Thai green chilli, chopped
  • 30 grams coriander leaves
  • Salt to taste

Method

  1. Blanch the tomatoes to remove the skin. Peel and quarter to get 4 slices from each tomato. Remove the seeds.
  2. In a bowl massage the tomatoes with tamarind and jaggery water.
  3. Toss in all other ingredients into the bowl. Mix well.
  4. Garnish with some more garlic chips and serve.
