Ingredients list for Beetroot Coconut Barfi
- 1 medium Beetroot , peeled and grated
- 2 cups Fresh coconut , scraped
- 1 tbsp _ for greasing Ghee
- 1 cup Sugar
- 1/2 cup Fresh cream
- to garnish Walnuts
- 3 tablespoons Powdered sugar
- 1/2 teaspoon Green cardamom powder
Method
- Grease a barfi tray with some ghee.
- Heat ghee in a deep non-stick pan, add sugar, coconut and cream and mix well. Cook on medium heat, stirring continuously, for 15-20 minutes.
- Meanwhile roughly chop walnuts.
- When mixture begins to leave the pan, add the beetroot and mix well. Add powdered sugar and green cardamom powder, mix well and cook on medium heat for 2-3 minutes.
- Transfer the barfi mixture in the greased tray and spread it evenly. Sprinkle walnuts on top. Set aside till set and cooled down to room temperature.
- Cut into rectangular barfis. Insert a coloured ice cream stick in each barfi, arrange them on a serving platter and serve immediately.
