Beans Foogath

Ingredients 

  • 200 grams French beans, finely chopped
  • 2 tablespoons coconut oil
  • 1 teaspoon mustard seeds
  • 1-2 green chillies, chopped
  • 8-10 curry leaves
  • 1 large onion, finely chopped
  • Salt to taste
  • 1/4 cup scraped  fresh coconut + for garnish
  • 1 tablespoon lemon juice

Method

  1. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add green chillies, curry leaves and saute well.
  2. Add onion and saute for 1-2 minutes or till translucent. Add beans and salt and mix well. Cover and cook on medium heat for 6-8 minutes.
  3. Add coconut and lemon juice and mix well. Take the pan off the heat.
  4. Transfer into a serving bowl, garnish with coconut and serve hot with chapatis.
