Ingredients
- 3 medium potatoes, peeled and cut into 1 inch cubes
- ½ cup scraped fresh coconut
- 5-6 dried red chillies, stemmed
- 1 teaspoon tamarind paste
- 2 tablespoons coconut oil
- 1 medium onion, finely chopped
- Salt to taste
Method
- Grind coconut, dried chillies and tamarind paste to a fine paste with sufficient water.
- Heat oil in a nonstick pan. Add the onion and sauté till translucent.
- Add the potatoes and sauté well on high heat for a minute.
- Add half cup water, cover and cook for five minutes.
- Add salt, ground mixture and mix well. Cover and cook for five minutes more.
- Serve hot with chapati/bhakri.
