Ingredients list for Basic Cupcakes with Cocoa Frosting
- 1 cup b+ 2 tablespoons Refined flour (maida)
- 1/2 cup Butter
- 2/3 cup + tablespoons Castor sugar
- 3/4 cup Sour cream
- 2 Egg whites
- 1 teaspoon Vanilla essence
- 1/2 teaspoon Baking powder
- A pinch Salt
- 1/4 cup Milk
- Frosting
- 2/3 cup Cocoa powder
- 1 cup Butter
- 2 cups Powdered sugar
- 1 teaspoon Vanilla essence
- 1 teaspoon Milk
- 1/2 cup Vegetable shortening
Method
- Preheat oven to 180° C.
- Take butter in a mixing bowl, add castor sugar and beat with an electric beater till light. Add sour cream and beat. Add egg whites and vanilla essence and beat well.
- Add flour and baking powder and fold till well combined. Add milk and mix well into a lump free batter. Transfer the batter into a piping bag fitted with a nozzle.
- Pipe out the batter into individual cupcake moulds, filling them till ¾ full. Place them on a baking tray, keep the tray in the preheated oven and bake for 8-10 minutes. Remove from oven, cool and demould.
- To make the frosting, Take butter in another bowl, add powdered sugar and vanilla essence and beat till light. Add milk, shortening and cocoa powder and beat till well combined. Fill the frosting in a piping bag fitted with a star nozzle.
- Keep the cupcakes on a serving platter, pipe out the frosting on each cupcake and serve.
