Ingredients 

  • 12-16 babycorns
  • 1 cup refined flour (maida)
  • ½ cup rice flour
  • 4 tablespoons cornflour
  • Salt to taste
  • 1 pinch crushed black peppercorns 
  • Oil to deep fry
  • Sweet chilli sauce to serve
  • Microgreens to garnish

Method

  1. Take refined flour, rice flour, 2 tbsps cornflour, salt, black pepper powder add sufficient chilled water and mix well into a smooth and slightly thick batter.
  2. Heat sufficient oil in a pan
  3. Take baby corn in a bowl, add the remaining cornflour and mix well. Dip each baby corn in batter and deep-fry in oil till golden and crisp. Drain on absorbent paper.
  4. Transfer into a serving bowl, garnish with microgreens and serve hot.
