Ingredients
- 12-16 babycorns
- 1 cup refined flour (maida)
- ½ cup rice flour
- 4 tablespoons cornflour
- Salt to taste
- 1 pinch crushed black peppercorns
- Oil to deep fry
- Sweet chilli sauce to serve
- Microgreens to garnish
Method
- Take refined flour, rice flour, 2 tbsps cornflour, salt, black pepper powder add sufficient chilled water and mix well into a smooth and slightly thick batter.
- Heat sufficient oil in a pan
- Take baby corn in a bowl, add the remaining cornflour and mix well. Dip each baby corn in batter and deep-fry in oil till golden and crisp. Drain on absorbent paper.
- Transfer into a serving bowl, garnish with microgreens and serve hot.
