Ingredients 

  • 1 medium apple
  • 1 medium cucumber
  • 1 tablespoon lemon juice
  • 4 lettuce leaves
  • 1/2 tablespoon salad oil
  • A pinch red chilli flakes
  • 4-5 fresh mint leaves
  • Salt to taste
  • 5-6 orange segments, halved
  • 1/2 medium carrot, peeed and  cut into thin strips
  • 1 medium tomato,quartered & sliced
  • 1 spring onion, sliced

Method

  1. Core and cut the apple into quarters and cut again into thin slices with the skin on. Sprinkle half the lemon juice and mix lightly. Peel the cucumber and cut into one-inch long pieces.
  2. Trim the lettuce leaves, wash under running water and soak in chilled water, to keep them fresh and crisp. Mix the remaining lemon juice, salad oil, red chilli flakes and mint leaves.
  3. Add salt to taste and whisk well. Drain the lettuce leaves and tear them into bite-size pieces. Make a bed of lettuce leaves on a serving dish. Drizzle one-fourth of the dressing over the leaves.
