Ingredients list for Appam
- 4 cups Rice soaked
- 1 cup Fresh coconut
- 2 cups Scraped coconut
- 3-4 White bread slices, soaked
- to taste Salt
- 1 teaspoon Sugar
- 1/2 teaspoon Soda bicarbonate
- as required Red chilli flakes
Method
- Drain and grind rice with a little water to a smooth paste.Transfer into a deep bowl.
- Grind cooked rice, coconut and bread with a little water till smooth and add to the rice batter in the bowl and mix well.
- Cover and keep in a warm place to ferment overnight.Heat a non stickappamchetty.Add salt, sugar and soda to the batter and mix well.
- Pour a ladle full of batter in the chetty and rotate it so that the batter spreads all around.
- The sides should be thin and the centre should be a little thick and spongy.
- Cover and cook till the edges turn crisp. Serve hot with kadla curry.
- You can also make it with eggs. To do that make the appam like above.
- Break an egg and put into a bowl. Slowly slide it onto the centre of the appam.
- Cover and cook till done. Sprinkle salt and red chilli flakes and serve hot.
