Ingredients
- 2 medium potatoes, boiled, peeled and diced
- 1/2 medium bunch spinach leaves (palak)
- 1 medium bunch fenugreek leaves (methi), chopped
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2 medium onions, finely chopped
- 1 inch ginger piece , chopped
- 1 tablespoon chopped garlic
- Salt to taste
- 1 teaspoon chopped green chillies
- A pinch of turmeric powder
- 1 teaspoon red chilli powder
- 1/4 cup spinach puree
- 3 tablespoons yogurt
Method
- Chop spinach leaves. Heat oil in a non-stick pan. Add cumin seeds and onions. Sauté till onions are soft.Add ginger and garlic. Mix well.
- Add chopped spinach and fenugreek leaves. Mix well.
- Add salt, green chillies, turmeric powder and red chilli powder. Mix well and cook for 1-2 minutes.
- Add spinach puree and mix well. Add 1/4 cup of water and potatoes. Mix well and cook for 2-3 minutes.
- Whisk yogurt and add to pan. Mix well and cook till done.
- Serve garnished with yogurt.
