Ingredients list for Achari Paneer Rice - SK Khazana

  • 150 grams Cottage cheese (paneer) cut into 1/2 inch cubes
  • 3 cups Rice cooked
  • 1 tablespoon Lemon pickle
  • 1 tablespoon Oil
  • 1/2 teaspoon Mustard seeds
  • 8-10 Black peppercorns
  • 2 Bay leaves
  • 1/2 cup Red, Green and red capsicums cut into triangles
  • to cook Salt
  • to garnish Fresh coriander sprig

Method

  1. Put lemon pickle into a blender and blend to a fine paste.
  2. Heat oil in a deep non-stick pan, add mustard seeds and let them splutter. Add black peppercorns and bay leaves and sauté till fragrant.
  3. Add blended pickle and cook on medium heat till oil separates. Add cottage cheese cubes, red, green and yellow capsicum triangles. Mix and sauté for 1-2 minutes.
  4. Add rice and salt and mix well. Cook for 3-4 minutes on medium heat.
  5. Transfer into serving dish, garnish with coriander sprig. Serve hot.
