Ingredients list for Achari Paneer Rice - SK Khazana
- 150 grams Cottage cheese (paneer) cut into 1/2 inch cubes
- 3 cups Rice cooked
- 1 tablespoon Lemon pickle
- 1 tablespoon Oil
- 1/2 teaspoon Mustard seeds
- 8-10 Black peppercorns
- 2 Bay leaves
- 1/2 cup Red, Green and red capsicums cut into triangles
- to cook Salt
- to garnish Fresh coriander sprig
Method
- Put lemon pickle into a blender and blend to a fine paste.
- Heat oil in a deep non-stick pan, add mustard seeds and let them splutter. Add black peppercorns and bay leaves and sauté till fragrant.
- Add blended pickle and cook on medium heat till oil separates. Add cottage cheese cubes, red, green and yellow capsicum triangles. Mix and sauté for 1-2 minutes.
- Add rice and salt and mix well. Cook for 3-4 minutes on medium heat.
- Transfer into serving dish, garnish with coriander sprig. Serve hot.
