Aam Ka Panna

Ingredients

    • 1 kilogram unripe green mangoes (aam) 
    • 3 cups sugar
    • ¼ teaspoon green cardamom powder
    • A pinch saffron strands
    • ¼ teaspoon nutmeg (jaiphal) powder
    • Ice cubes as required 
    • Fresh mint sprigs for garnishing                      

    Method 

    1. Wash and boil the mangoes and set aside to cool.  Peel the mangoes; mash and strain the pulp. 
    2. Blend together mango pulp, sugar, cardamom powder, saffron and nutmeg powder to a smooth paste.
    3. Pour spoonful of prepared mango paste into individual glasses. Add lots of ice cubes and top with chilled water.
    4. Garnish with mint sprigs and serve chilled.
