Ingredients for Zucchini Wrapped Dates With Chilli Honey Dip Recipe

  • Green zucchini 1

  • Yellow zucchini 1

  • Seedless dates 16

  • Sweet chilli sauce 2 tablespoons

  • Crushed red chillies 1/2 teaspoons

  • Honey 2 tablespoons

  • Mint leaves 20

  • Cheese grated 1/4 cup

  • Salt to taste

  • Soy sauce 1 teaspoon

  • Ginger juice 1 teaspoon

  • Red chilli powder a pinch

  • Lemon juice 2 teaspoons

  • Oil 2 tablespoons

  • Lemon 1/2


Step 1

Chop 7-8 mint leaves and put in a bowl. Add cheese and mix mashing slightly.

Step 2

Trim zucchini and cut into vertical thin slices. Keep them on a plate, sprinkle salt, soy sauce, ginger juice, chilli powder and set them aside for a while to soften.

Step 3

Stuff cheese mixture into the dates.

Step 4

Heat oil in a non stick pan. Wrap one stuffed date in each zucchini slice and secure with a toothpick. Place these rolls in the pan and cook, turning, till the zucchini gets cooked.

Step 5

Chop remaining mint leaves finely and put in a bowl. Add sweet chilli sauce, crushed red chillies, honey and juice of ½ lemon and mix well.

Step 6

Arrange zucchini wrapped dates on a serving plate, drizzle some of this sauce over them and serve with remaining sauce in a bowl.
