Walnut Nankhatai

Ingredients 

  • ½ cup California walnuts coarsely crushed
  • Whole California walnuts as required
  • 1½ cups refined flour (maida)
  • ¾ cup powdered sugar
  • ½ cup gram flour (besan)
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon green cardamom powder
  • 1 cup desi ghee

Method

  1. Preheat oven to 180° C. Line a baking tray with a silicon mat.
  2. Take refined flour in a mixing bowl, add powdered sugar, gram flour, baking powder, baking soda, cardamom powder and crushed California Walnuts and mix well. Add ghee and mix till you get a breadcrumb consistency. Then knead with your hands into a semi-soft dough.
  3. Divide the dough into equal portions, shape into balls and flatten lightly between your palms.
  4. Place them on the lined baking tray, place one California Walnut in the center of each nankhatai and press lightly.
  5. Keep the tray in the preheated oven and bake for 20-25 minutes. Remove from the oven and cool down to room temperature.
  6. Serve or store in an air tight container to serve when required.
