Ingredients list for Veggie Stuffed Chicken Piccata

  • 2 Boneless chicken breasts
  • for greasi Butter
  • ½ medium Green zucchini cut into 2 inch strips
  • 1 cup Capsicum mixed strips
  • to taste Salt
  • to taste Crushed black peppercorns
  • to sprinkle Dried mixed herbs
  • to sprinkle Red chilli flakes
  • Balsamic vinegar for drizzling

Method

  1. Preheat oven to 180° C.
  2. Thinly slice chicken breasts horizontally and flatten them with a steak hammer. Halve each flattened chicken piece.
  3. Grease the baking tray with some butter and place the chicken pieces. Place one zucchini strip and few mixed capsicum strips in the center of each chicken piece.
  4. Sprinkle some salt, crushed peppercorns, dried mixed herbs and chilli flakes on top and drizzle some balsamic vinegar. Roll the prepared chicken pieces, brush some butter on top and drizzle some more balsamic vinegar.
  5. Place the tray in the preheated oven and bake for 8-10 minutes.
  6. Serve hot.
