Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Veg Pizza Recipe

  • Cauliflower grated ½ cup

  • Carrots grated ½ cup

  • Green zucchini grated ½ cup

  • Refined flour (maida) ½ cup

  • Whole wheat flour (atta) ½ cup + for dusting

  • Salt to taste

  • Pesto sauce ¼ cup

  • Button mushrooms sliced 12-16

  • Fresh red chillies sliced 2-3 large

  • Cherry tomatoes halved 5-6

  • Mozzarella cheese 25 grams

Method

Step 1

Preheat oven to 200º C.

Step 2

Mix refined flour, wheat flour, cauliflower, carrots, zucchini and salt in a bowl. Add sufficient water and knead into a soft dough.

Step 3

Dust the worktop with some flour. Place the dough on it and roll out into a thin square sheet. Place it on a baking tray and spread pesto evenly on it.

Step 4

Top with mushrooms, red chillies and cherry tomatoes. Grate cheese on top, place the tray in the preheated oven and bake for 12-15 minutes.

Step 5

Cut into wedges and serve hot.
