Ingredients list for Tomato Roll

  • 4 Tomato Tortillas
  • 1 medium Mozzarella Cheese
  • Oil 1 tablespoon + 1 teaspoon
  • 1 medium Onion
  • 8-10 Garlic cloves
  • 1/4 cup Grated carrot
  • to taste Salt
  • to taste Crushed black peppercorns
  • 1 medium Potato boiled, peeled and grated
  • 4 teaspoons Red chilli sauce
  • 1/2 cup Mozzarella cheese grated

Method

  1. Heat 1 tbsp oil in a non-stick pan.
  2. Finely chop onion, garlic cloves and green capsicum in a chopper and put in the pan.
  3. Sauté for a minute, add carrot, salt and crushed peppercorns and sauté further till the vegetables are soft. Add potato and mix well.
  4. Spread 1 tsp red chilli sauce on each tomato tortilla, place a portion of a cooked vegetable at one end, spread mozzarella cheese over it and roll.
  5. Heat 1 tsp oil in a non-stick grill pan, place the rolls in it and cook, turning, till the grill marks appear all around.
  6. Halve one of the prepared tomato rolls and arrange all of them on a serving plate and serve immediately.
