Ingredients list for Thai Chicken Rice
- 400 grams Boneless Chicken cut into 1 cm pieces
- 1 1/2 cups Basmati Rice soaked
- 2 tablespoons Oil
- 4 tablespoons Shallots chopped
- 1 teaspoon Ginger chopped
- 2 tablespoons Curry powder
- 1 teaspoon Garlic chopped
- 1 tablespoon Thai red curry paste
- to taste Salt
- 1 cup Coconut milk
- 2 Fresh red chillies
- 1 tablespoon Lemon juice
Method
- Heat oil in a rice cooker, add shallots, ginger and garlic. Mix and sauté for 1 minute. Add red curry paste and chicken and mix. Add curry powder, salt and 2 cups water and mix well.
- Add rice and mix well. Add coconut milk and mix again.Diagonally slice red chillies and add along with lemon juice. Mix well, cover and cook till done. Serve hot.
