In Japanese cuisine consists of food is cooked in a specific way based on the culture and tradition of Japan. The traditional cuisine of Japan comprises of rice with an emphasis on seasonal ingredients. The side dishes often consist of fish, pickled vegetables and vegetables cooked in broth. Fish is common in the traditional cuisine. It is often grilled, but it may also be served raw or dipped in a light batter and deep-fried.
Japanese cuisine has now become popular throughout the world. As of 2011, Japan has overtaken France in number of Michelin starred restaurants and has maintained the title ever since.

Ingredients for Teriyaki Rolls Recipe

  • Crusty Bread Rolls 4 medium

  • Mushrooms sliced 10

  • Olive oil 1 tablespoon

  • Green capsicums sliced 2 medium

  • Onion sliced 1 large

  • Firm beancurd (tofu) cubed 1/2 cup

  • FOR SAUCE

  • Butter 2 tablespoons

  • Ginger sliced 1 inch piece

  • Onion finely chopped 1 medium

  • White wine 1/2 cup

  • Black grapes crushed 12-15

  • Soy sauce 1 tablespoon

  • Black pepper powder 1/2 teaspoon

  • Salt to taste

  • Molasses 1 tablespoon

  • Honey 2 tablespoon

Method

Step 1

To make teriyaki sauce heat butter in a pan. Add ginger and onion and sauté till golden. Add white wine and cook till the mixture reduces a little.

Step 2

Add hand crushed black grapes and continue to cook stirring for five to seven minutes till the grapes become soft. Add soy sauce, black pepper powder, salt, molasses and honey.

Step 3

Mix well and strain the sauce. Set it aside.

Step 4

Heat olive oil in a pan, add green capsicum, mushrooms, onion and tofu and toss for two minutes. Add teriyaki sauce and mix. Cook for two minutes.

Step 5

Divide the mixture into four portions. Halve the crusty rolls and spread one portion of the vegetable and tofu mixture on one half of each roll and cover it with the other half. Serve immediately.
