Ingredients
- 2 cups coconut milk
- 450 grams sweet potatoes, cut into pieces and soaked
- 1 tablespoon oil
- 2 medium onions, finely chopped
- 1 1/2 tablespoons grated ginger
- 3-4 garlic cloves, pressed
- 1/2 teaspoon turmeric powder
- Salt to taste
- 1 tablespoon soy sauce
- 3 fresh red chillies
- 1/2 lemon
Method
- Heat oil in a non stick pan. Add onion and sauté till soft. Add ginger, garlic and turmeric powder, mix well and cook for 1 minute.
- Add sweet potato pieces and mix well. Add 1 cup coconut milk, salt, soy sauce, mix, cover and cook for 2 minutes.Chop fresh red chillies and add.
- Mix well, add remaining coconut milk and mix again. Cover and cook till sweet potatoes are soft. Squeeze lemon and add its juice and mix well. Serve hot.
