You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Soft Creamy Eggs With Prawns Recipe

  • Egg 2

  • Prawns shelled and deveined 200 grams

  • Green capsicum 1/2 medium

  • Red capsicum 1/2 medium

  • Oil 3 tablespoons

  • Salt to taste

  • Black pepper powder 3/4 teaspoon

  • Milk 2 tablespoons

  • Spring onion bulbs chopped 3-4

  • Spring onion greens chopped 1 stalk

  • Rice soaked and drained and cooked in microwave 1 cup

Method

Step 1

Finely chop green and red capsicums. Heat 2 tbsps oil in a non stick pan. Add salt and ½ tsp pepper powder to prawns along with cornflour and mix well. Add the prawns to the pan and sauté lightly.

Step 2

Break eggs into a bowl, add salt and ¼ tsp pepper powder and whisk. Add milk and mix well. Turn the prawns over so that they cooked evenly all around. When done transfer them into a bowl. Heat 1 tbsp oil in the same pan, add spring onion bulbs and sauté lightly.

Step 3

Add eggs and stir till they get scrambled. Cook till creamy. Add prawns and mix and switch off the heat. Add red and green capsicums and spring onion greens and mix. Place the rice in a serving bowl and place the prawns-egg mixture over it and serve hot.
