Shrimp Popcorn

Crisp and delicious, these shrimp popcorn are excellent with cocktails.These mouth-popping deep-fried prawn morsels are addictive, especially when dressed with mayonnaise and a citrussy vinaigrette. Sweet shrimp, marinated inseasoning, then coated in breadcrumbs and fried until golden. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Shrimp Popcorn

  • 1 cup Shrimps cleaned
  • 4 White bread slices
  • to deep fry Oil
  • to taste Salt
  • to taste Crushed black peppercorns
  • Lemon juice of ½ lemon
  • 3-4 Fresh parsley sprigs
  • 2 Eggs

Method

  1. Heat sufficient oil in a kadai.
  2. Take shrimps in a bowl. Add salt, crushed peppercorns and lemon juice and mix well. Set aside.
  3. Cut bread slices into small pieces and put in a grinder jar. Grind to get breadcrumbs and transfer onto a plate.
  4. Finely chop parsley sprigs and add to the breadcrumbs and mix well.
  5. Separate egg whites from yolks. Add salt to the whites and whisk well.
  6. Dip marinated shrimps, one by one, in the whisked egg whites, coat with breadcrumbs mixture and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
  7. Serve hot with lemon wedges.
