Ingredients list for Pulled Chicken Burger

  • 500 grams Chicken Legs
  • 4 Burger Bun
  • 1 medium Onion
  • to taste Salt
  • 1 tablespoon Olive oil
  • 1/4 medium Green capsicum
  • 1 tablespoon Tomato ketchup
  • 1 tablespoon Red chilli sauce
  • 2 teaspoons Brown sugar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Mustard powder
  • to taste Crushed black peppercorns
  • 1 teaspoon Vinegar
  • 4-5 Lettuce leaves
  • Onion rings for serving
  • Alfalfa sprouts for serving

Method

  1. Slice ½ onion. Heat a deep non-stick pan, add onion, chicken legs, salt and 5 cups water and mix well. Cook on low heat for 3 hours.
  2. Drain liquid from the boiled chicken, cool down to room temperature and shred with a fork.
  3. Heat olive oil in another non-stick pan, slice the remaining ½ onion and add to the pan and sauté till translucent.
  4. Cut capsicum into thin strips and add to the pan. Add tomato ketchup, red chilli sauce, brown sugar, Worcestershire sauce, mustard powder and crushed peppercorns and mix well. Add shredded chicken and mix well. Add vinegar and mix well. Cook on low heat for a few minutes.
  5. Halve each burger bun. Place them, the inner side facing downwards on another hot non stick pan and toast.
  6. Place onion rings and alfalfa sprouts on 4 serving plates. Place base half of each bun on other side of the plates, place a lettuce leaf and some chicken mixture over them and cover with top half of the bun. Serve immediately.
