Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Potato Stacks Recipe

  • Potatoes thinly sliced 3-4 medium

  • Butter ¾ cup

  • Fresh thyme sprigs 2-3 + for garnishing

  • Salt to taste

  • Crushed black peppercorns to taste

  • Lemon juice 1 tablespoon

Method

Step 1

Preheat oven to 180° C. Line a baking tray with a silicon mat.

Step 2

Heat butter in a small deep non-stick pan. Add torn thyme sprigs, salt, crushed peppercorns and lemon juice and mix.

Step 3

Take sliced potatoes in a bowl. Add butter mixture and mix lightly.

Step 4

Stack 12-15 potato slices and insert toothpick in the center. Drizzle some butter mixture on top and place on the lined tray. Place the tray in preheated oven and bake for 15-20 minutes.

Step 5

Garnish with thyme sprigs and serve immediately.
