This dish is so simple to make and yet so very tasty – rich with thyme flavoured butter

Ingredients list for Potato Stacks
- 3-4 medium Potatoes thinly sliced
 - ¾ cup Butter
 - 2-3 + for garnishing Fresh thyme sprigs
 - to taste Salt
 - to taste Crushed black peppercorns
 - 1 tablespoon Lemon juice
 
Method
- Preheat oven to 180° C. Line a baking tray with a silicon mat.
 - Heat butter in a small deep non-stick pan. Add torn thyme sprigs, salt, crushed peppercorns and lemon juice and mix.
 - Take sliced potatoes in a bowl. Add butter mixture and mix lightly.
 - Stack 12-15 potato slices and insert toothpick in the center. Drizzle some butter mixture on top and place on the lined tray. Place the tray in preheated oven and bake for 15-20 minutes.
 - Garnish with thyme sprigs and serve immediately.
