Ingredients list for Pomfret With Salsa Verde

  • 4 Pomfret
  • 3 Parsley
  • to taste Salt
  • 1 bunch For salsa Parsley large
  • 1/4 cup Pine nuts(chilgoza)
  • 5 small Cocktail gherkins
  • 8 Green olives
  • 2-3 cloves Garlic crushed
  • 3 tablespoons Lemon juice
  • to taste Salt
  • to taste White pepper powder
  • 8 tablespoons Extra virgin olive oil

Method

  1. Prepare salsa verde by blending parsley, pinenuts, gherkins, olives, garlic, lemon juice, salt and pepper powder in a food processor .
  2. Gradually add the extra virgin olive oil to form a creamy paste.
  3. Adjust the seasoning. Heat the olive oil in a non stick pan.
  4. Place the fish fillets, sprinkle salt and cook on low heat.
  5. Turn the fish and sprinkle salt on the other side too.
  6. . Cook till the fish is evenly done on both the sides. Serve the fish with salsa verde.
