You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Poached Egg Tuna Burger-Cook Smart Recipe

  • Eggs 4

  • Burger buns 4

  • Olive oil for grilli

  • Spring onions with stems 20

  • Salt 1 to taste

  • Vinegar 1 teaspoon

  • Medium tomatoes 2

  • Iceberg lettuce leaves 8-12

  • Black peppercorns crushed to taste

  • Tuna mayonnaise

  • Tinned tuna 1 cup

  • Mayonnaise 4 teaspoons

  • Yogurt 3 teaspoons

  • Pickled jalapeno sliced 1


Step 1

To make each burger, heat some olive oil in a non-stick grill pan. Place 5 spring onion bulbs with stems and grill till evenly done from all sides.

Step 2

Heat sufficient water in a deep non-stick pan. Add salt and boil.

Step 3

To make tuna mayonnaise, place tuna in a blender jar. Add mayonnaise, yogurt and jalapeno slices and blend into a coarse mixture. Transfer into a bowl.

Step 4

Halve a burger bun horizontally. Place on the grill pan and grill till both sides turn crisp.

Step 5

Break an egg into another bowl.

Step 6

Add vinegar to the boiling water. Stir with a whisk, gently slide in the egg and let it poach while the water is going round and round.

Step 7

Slice tomatoes .

Step 8

Place 2-3 lettuce leaves on the grilled bun half base. Spread tuna mayonnaise generously on top and place 2 tomato slices.

Step 9

Spread tuna mayonnaise on the inner side of the top half of the burger bun and place the grilled spring onions over it.

Step 10

Drain the poached egg with a slotted spoon and place it over the tomato slices. Sprinkle crushed peppercorns on top. Make remaining burgers similarly.

Step 11

Serve immediately.
