History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Pista Surprise Recipe

  • Pistachios 1/4 cup + for garnishing

  • Refined Flour 2 cups

  • Ghee 2 tablespoons

  • Sugar 1 tablespoon

  • Lemon 1

  • Oil for deep-frying

  • Icing sugar to dusting


Step 1

Knead together refined flour and ghee with sufficient water into a stiff dough. Cover with cling film and set aside for ten to fifteen minutes.

Step 2

Heat a non-stick pan, add sugar and two cups of water and stir sugar melts.

Step 3

Roughly chop pistachios.

Step 4

Squeeze lemon juice to the sugar syrup and mix well

Step 5

Divide dough into eight equal portions and shape them into balls. Roll out into circular discs and cut into rectangles.

Step 6

Take some water in a bowl.

Step 7

Place some pistachios in the center of a rectangle and roll into a cigar. Dampen the open edge and press lightly to seal.

Step 8

Heat sufficient oil in a kadai.

Step 9

Remove the sugar syrup from heat and set aside.

Step 10

Deep-fry the cigars in hot oil till golden. Drain on absorbent paper.

Step 11

Soak the fried cigars in the sugar syrup for one to two minutes. Drain and place on a serving plate.

Step 12

Dust icing sugar on top of the cigars and garnish with some pistachios and serve.
