Ingredients list for Pethe ka Halwa

  • 1 Medium ash gourd (petha)
  • 3/4 cup Sugar
  • 1/2 teaspoon Green cardamom powder
  • 3 cups Milk
  • 3/4 cup Mawa grated
  • 2 tablespoons Cashewnuts roughly chopped
  • 2 tablespoons Ghee
  • 1 teaspoon Rose water
  • 6-8 Fried cashewnuts

Method

  1. Peel, quarter, remove seeds and grate the ash gourd and keep it soaked in water.
  2. Heat a non-stick pan, squeeze the grated ash gourd to remove excess water and put into the pan.
  3. Add sugar and mix well. Add green cardamom powder and mix. Add 2 cups milk, mix well and continue to cook till most of the milk gets absorbed.
  4. Add remaining milk, nix and cook, stirring continuously. Add mawa and mix.
  5. Add cashewnuts and cook, stirring continuously.
  6. Drizzle ghee along the sides of the pan, mix and cook till thick. Add rose water and mix.
  7. Transfer into a serving dish, garnish with fried cashewnuts and serve hot.
