Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.

Ingredients for Pesto Pasta with Olive Oil Recipe

  • Wholewheat penne pasta 200 grams

  • Black olives pitted and sliced 8-10

  • Extra virgin olive oil 2 tablespoons

  • Milk 2 tablespoons

  • Red chilli flakes 1/4 teaspoon

  • Pesto sauce

  • Basil leaves 3/4 cup

  • Garlic 3-4 cloves

  • Salt to taste

  • Parmesan cheese 8 slices

  • Fresh parsley 1 tablespoon

  • Extra virgin olive oil 4 tablespoons

Method

Step 1

Heat sufficient water in a deep non stick pan, keep a strainer in it and put the pasta in it. Cook till just done.

Step 2

Grind together basil leaves, garlic, salt, parmesan cheese, parsley and 2 tbsps extra virgin olive oil to a paste.

Step 3

Add another 2 tbsps extra virgin olive oil and grind again.

Step 4

Heat 2 tbsps extra virgin olive oil in a non stick pan, add the pesto and sauté. Drain the pasta and add and mix well.

Step 5

Add 2 tbsps milk and mix. Add black olives and mix well.

Step 6

Sprinkle crushed red chillies and serve hot.
