Ingredients list for Papaya Burfi

  • 1 medium Papaya peeled, halved and seeded
  • 1 tablespoon Khoya
  • 2 tablespoons Almonds finely chopped
  • 1 tablespoon Pistachios finely chopped
  • 1/2 cup Sugar
  • a pinch Green cardamom powder
  • 1 cup Khoya/mawa grated

Method

  1. Grate papaya and place in a bowl.
  2. Heat ghee in a non-stick pan. Add almonds and pistachios and sauté for 1- 2 minutes.
  3. Add papaya and sauté on high heat for 5-6 minutes. Add sugar, green cardamom powder and mix well till sugar dissolves. Cook for 8-10 minutes or till syrup reaches 1 string consistency.
  4. Add khoya and cook for 1-2 minutes. Switch off the heat and keep stirring for 8-10 minutes till the mixture cools.
  5. Line an aluminium tray with a cling film. Pour the mixture into the tray and allow it to set at room temperature for 1 hour and then in the refrigerator for 3-4 hours.
  6. Cut into squares, transfer into a serving plate and serve.
