Papaya Barfi

Papaya puree gives these besan barfis a lovely colour, flavour and plenty of nutrients too. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Papaya Barfi

  • 1 cup Papaya ripe, puree
  • ½ cup Coarse gram flour (besan)
  • ¾ cup + for greasing Ghee
  • ½ cup Milk
  • a pinch Saffron (kesar)
  • 1 cup Sugar
  • ½ teaspoon Green cardamom powder
  • 10-12 Pistachios slivered

Method

  1. Grease a barfi tray with some ghee.
  2. Dry roast gram flour in a non-stick pan on low heat till golden brown. Transfer into a bowl and set aside.
  3. Put papaya puree in the same pan and cook for 5-10 minutes.
  4. Heat ghee in another non-stick pan. Add milk, saffron and sugar, mix and bring to a boil.
  5. Add the roasted gram flour, papaya puree and cardamom powder, mix well and cook till the mixture thickens.
  6. Pour the mixture into the greased tray, spread evenly, sprinkle pistachios on top and set aside to set for 1 hour.
  7. Cut into pieces and serve.
