Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Pan Fried Mushrooms Recipe

  • Button mushrooms quartered 20-24

  • Porcini mushrooms 1/2 cup

  • Oyster mushrooms 1/2 cup

  • Oil 1 tablespoon

  • Garlic crushed 3

  • Onions cut into 1/2 inch cubes 2 medium

  • Salt to taste

  • Black pepper powder 1 1/2 teaspoon

  • Dried mixed herbs 1/2 teaspoon

  • Soy sauce 1 tablespoon

  • Red chilli sauce 1 tablespoon

  • Vinegar 1/2 tablespoon

  • Red capsicum cut into 1/2 inch pieces 1 small

  • Yellow capsicum cut into 1/2 inch pieces 1 small

Method

Step 1

Soak the porcini and oyster mushrooms in lukewarm water for twenty minutes. Drain. Wash well and set aside.

Step 2

Heat the oil in a large non-stick pan. Add the button mushrooms and garlic and sauté over medium heat.

Step 3

Add the porcini and oyster mushrooms and stir-fry for a minute.

Step 4

Add the onions, salt, black pepper powder, mixed dried herbs and soy sauce and stir-fry on high heat for a minute.

Step 5

Add the red chilli sauce, vinegar, red capsicum and yellow capsicum and toss.

Step 6

Sauté for further two minutes. Remove from heat and serve hot.
