Ingredients list for One Pot Chicken and Lemon Rice

  • 4 Chicken on the bone
  • 1½ cups Rice soaked
  • Zest of 1 lemon
  • 4 tablespoons Lemon juice
  • 1 tablespoon Fresh oregano chopped
  • 4-5 Garlic cloves chopped
  • to taste Salt
  • 1½ tablespoons Olive oil
  • 1 small Onion finely chopped
  • 2 cups Chicken stock
  • for garnishing Fresh parsley sprigs
  • for garnishing Lemon slices

Method

  1. Preheat the oven 180ºC.
  2. Combine lemon zest, lemon juice, oregano, garlic and salt in a bowl. Add chicken and mix well. Set aside for 10 to 15 minutes.
  3. Heat 1 tablespoon olive oil in a non-stick pan. Add onion and sauté till translucent.
  4. Add the rice, mix and sauté for 2 to 3 minutes.
  5. Add the chicken stock, mix and cook for a minute. Transfer in an oven proof dish.
  6. Heat the remaining olive oil in the same pan. Add the chicken and sear till light brown from both sides.
  7. Arrange the seared chicken pieces on top of the rice. Cover with aluminium foil and place on a baking tray. Add water in the tray, put the tray in the preheated oven and bake for 15-20 minutes or till all the liquid is absorbed.
  8. Garnish with parsley sprigs and lemon slices. Serve hot.
