Ingredients list for Old Fashioned Doughnuts

  • 300 grams+ as required Refined flour (maida)
  • 120 grams Castor sugar
  • 3 Egg yolks
  • 15 grams Butter
  • 1 teaspoon Vanilla essence
  • 190 grams Sour cream
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • to deep fry Oil
  • 1/2 cup White chocolate , melted
  • 1/2 cup Dark chocolate , melted

Method

  1. Take castor sugar in a bowl, add egg yolks, butter and vanilla essence and beat with an electric beater till light. Add sour cream and beat well.
  2. Sieve together refined flour, baking powder and salt directly into the above mixture and fold in till dough is formed.
  3. Wrap dough in cling film and refrigerate for 2-3 hours.
  4. Heat sufficient oil in a kadai.
  5. Dust the worktop with some flour. Bring the dough out of the refrigerator keep on the worktop and roll out into ½ inch thick sheet.
  6. Coat a medium size cookie cutter with some flour and cut the sheet into roundels.
  7. Cut a smaller roundel from the center of each roundel with a small cookie cutter to shape them into doughnuts.
  8. Dust the excess flour from the doughnuts, slide into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper and set aside to cool slightly.
  9. Dip a couple of doughnut in melted white chocolate and a couple in melted dark chocolate. Alternatively you can dip half side of a couple of doughnut in white chocolate, and half side of another couple of doughnuts in dark chocolate. Keep them on a wire rack.
  10. Serve.
