Ingredients for Oatmeal and Nutty Toffee Rolls Recipe

  • Oatmeal 1 cup

  • Almonds chopped 1/4 cup

  • Walnuts chopped 1/4 cup

  • Pistachios chopped 1/4 cup

  • Castor sugar 1 cup

  • Ghee 1 tablespoon

  • Jaggery grated 1/4 cup

  • Fresh cream 1/4 cup

  • Vanilla essence 1 teaspoon

  • Butter 2 tablespoons

Method

Step 1

Dry roast oatmeal in a non-stick pan till golden.

Step 2

To make toffee sauce, caramelize castor sugar in another non-stick pan, stirring occasionally.

Step 3

Transfer oatmeal into a bowl.

Step 4

Heat ghee in another non-stick pan. Add almonds, walnuts and pistachios and fry.

Step 5

Add jaggery, 1-2 tbsps water, mix and fry till the nuts turn golden and jaggery melts.

Step 6

Add cream, vanilla essence and butter to the caramelized sugar. Mix well and switch off the heat.

Step 7

Add jaggery mixture to the roasted oatmeal and mix well. Cool to room temperature.

Step 8

Divide the oat-jaggery mixture into equal portions shaped into small cylinders and place them on a serving plate.

Step 9

Drizzle toffee sauce on top and serve immediately.
