Ingredients list for Nasi Kuning
- 1 1/2 cups Rice soaked
- 1 1/2 inch piece Coconut milk sliced
- 1 inch stalk Lemon grass braised
- 2 Bay leaves
- 1 cup Coconut milk
- to taste Salt
- 1/2 teaspoon Turmeric powder
- 2 cups Vegetable stock
- 1/2 inch piece Galangal crushed optional
- 2-3 tablespoons Shallots thinly sliced deep fried
Method
- Grind fresh turmeric with a little water to a smooth paste.
- Heat a pan, add drained rice, bruised lemon grass, bay leaves, coconut milk and salt and mix.
- Strain the fresh turmeric puree into the pan.
- Add two cups of vegetable stock, turmeric powder and let the mixture come to a boil.
- You can also add galangal if you wish.
- Cover and cook on medium heat till done.
- Remove the bay leaves and galangal (if added).
- Tightly pack the rice in a conical mould, upturn it onto a serving plate and served garnished with fried shallots.
