Heat the oil in a kadai; add the onions and sauté till light brown. Add the tomatoes, mix well and cook for five minutes, stirring continuously. Add the mushrooms, tomato purée and ground masala and cook for three or four minutes. Add the sugar, more salt if necessary and mix well. Add the remaining malt vinegar and cook for five to seven minutes. Serve.
