Ingredients list for Multigrain Cookies - SK Khazana

  • 2 1/2 cups Finger millet (ragi / nachni) flour
  • 1 1/4 cups refined flour
  • 1 1/4 cups whole oats crushed
  • 1 1/2 teaspoons Baking powder
  • 1 1/4 cups brown sugar/jaggery
  • 1 1/2 cups Castor sugar (caster sugar)
  • 5 tablespoons Pumpkin seeds
  • 5 tablespoons Sunflower seeds (charoli/chironji)
  • 5 tablespoons Melon seeds (magaz)
  • 1 teaspoon Cinnamon powder
  • 1/2 teaspoon Nutmeg powder
  • 4 tablespoons raisins chopped

  • 1/4 cup butter

Method

  1. Sieve finger millet flour into a large bowl. Sieve refined flour and baking powder into the same bowl. Add brown sugar, castor sugar, pumpkin seeds, sunflower seeds, melon seeds, cinnamon powder, nutmeg powder, raisins and oats and mix well. It will keep for upto 21 days stored in an airtight container.
  2. Preheat oven to 180º C. Line a baking tray with parchment paper.
  3. Take 2 cups of the premix in a mixing bowl, add butter and mix well. Add 2 tbsps water and knead into a dough.
  4. Divide the dough into equal portions and shape them into cookies. Place them on the prepared baking tray. Place the tray in the preheated oven and bake for 15-20 minutes.
  5. Place them on a serving plate and serve when cooled.
