History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Moong Toast Recipe

  • Whole green gram (sabut moong) , soaked for 5-6 hours and boiled 1 cup

  • Brown bread slices 8

  • Onion 1 medium

  • Potatoes , boiled and peeled 3 medium

  • Salt to taste

  • Chaat masala 2 teaspoons

  • Pav bhaji masala 1 tablespoon

  • Coriander-mint chutney as required

  • Butter to cook

  • Onion , cut into thin roundels layers separated 1 medium

Method

Step 1

Chop onion finely and put into a bowl and add green gram. Crush boiled potatoes and add.

Step 2

Add salt, chaat masala and pav bhaji masala and mix well mashing slightly.

Step 3

Apply coriander-mint chutney on all the bread slices. Spread gram mixture generously on 4 slices and cover them with the remaining 4 slices. Apply a little butter on outer sides of the sandwiches.

Step 4

Grease a sandwich toaster with butter or oil or ghee, place a sandwich in it, close and cook on medium heat, turning sides till both sides are golden.

Step 5

Cut each sandwich into 2 triangles, place them on individual serving plates, garnish with onion rings and serve hot.

Step 6

Cut into 2 triangles, arrange on serving plate, garnish with onion rings and serve hot.
