Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Mixed Vegetable Raita - SK Khazana Recipe

  • Yogurt 1 1/2 cups

  • Onion peeled 1 medium

  • Cucumber peeled 1/2 medium

  • Tomato 1/2 medium

  • Fresh coriander sprigs 8-10

  • Cumin seeds 1 teaspoon

  • Black salt (kala namak) to taste


Step 1

Finely chop onion, cucumber, tomato and sprigs of coriander leaves.

Step 2

Heat a non-stick pan, add cumin seeds and dry toast till fragrant and lightly browned. Transfer into a mortar and pound to a coarse powder with the pestle.

Step 3

Take yogurt in a bowl and whisk it well. Add onion, cucumber, tomato, coriander leaves, ½ tsp roasted cumin powder and black salt and mix well.

Step 4

Transfer into a serving bowl, garnish with some roasted cumin powder and serve.
