Ever imagined what life would be without some meetha? The gulab jamuns, barfis, pedas, laddoos, modaks, halwas…you can say let the sugar substitutes rule but not everything is possible with substitutes! One of oldest flavourings and condiments used by mankind, this ingredient is an instant provider of energy. Also available in various types, sugar is either derived from sugarcane or beetroot.

Ingredients for Mithoo Dahi Recipe

  • Sugar 4 cups

  • Yogurt 1/2 cup

  • Gelatin 1 tablespoon

  • Yogurt 1 tablespoon

  • Nutmeg powder a pinch

  • Green cardamom powder a pinch

  • Vanilla essence a few drops

  • Saffron (kesar) a few strands

Method

Step 1

Heat milk in a thick-bottomed pan and bring to a boil. Add sugar, reduce heat and simmer for eight to ten minutes. Mix gelatine in one-fourth cup of warm water and stir till dissolved. Keep aside.

Step 2

Remove reduced milk from heat and allow to cool a little. Add gelatine and stir to mix well. Add yogurt, nutmeg powder, cardamom powder and vanilla essence and stir again while the milk is still warm.

Step 3

Transfer in a serving bowl or an earthenware pot, sprinkle saffron, do not stir and allow to set overnight. Serve chilled.
