Ingredients list for Masala Mashed Potatoes
- 1 cup Potatoes boiled, peeled and mashed
- 1 tablespoon Extra virgin olive oil
- 1 teaspoon Butter
- 1 medium Onion
- 1/4 teaspoon Asafoetida
- 1/2 teaspoon Mustard seeds
- 1/2 teaspoon Cumin seeds
- 20-25 Curry leaves
- 1 Green chilli chopped
- to taste Salt
- 5-6 Curry leaves deep fried
- 1 Dried red chilli deep fried
Method
- Heat extra virgin olive oil in a non stick pan. Add butter and let it melt. Chop onion.
- Add asafoetida and mustard seeds to the pan and let the seeds splutter. Add cumin seeds, curry leaves and onion and saute for 1 minute. Add mashed potatoes and switch off the heat.
- Add green chilli, salt and mix well. Grease a stainless steel ring lightly and place it in the centre of the serving plate.
- Put the potato mixture into the ring but do not press it or level the surface. Garnish with fried curry leaves, fried red chilli, slowly remove the ring and serve.
