Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Lemon Risotto Recipe

  • Lemon juice 1 1/2 tablespoons

  • Arborio rice

  • Lemon zest grated 1 tablespoon

  • Arborio rice 1 cup

  • Olive oil 1 1/2 tablespoons

  • Onions diced 2 medium

  • Vegetable stock 2 1/2 cups

  • Salt to taste

  • Parmesan cheese grated 3 tablespoons

  • Broccoli cut into florets 10-15

  • Garlic crushed 2 cloves

  • Butter 1 teaspoon


Step 1

Heat the oil in a non stick pan, add the onions and rice and sauté for a couple of minutes.

Step 2

Add the garlic and continue to sauté for another couple of minutes. Add half cup of vegetable stock, lemon zest and salt and stir. Once this stock is absorbed add more stock, cover and cook.

Step 3

Continue in this way till all the stock is used up.

Step 4

Add two tablespoons parmesan cheese and broccoli and mix. Add the lemon juice and mix. Cover and cook for two to three minutes. Add the butter and mix.

Step 5

Sprinkle the remaining parmesan cheese over the top and serve hot.
