By Sanjeev Kapoor 05 May 2016 in Recipes Course New Update Main Ingredients Lemon juice, Arborio rice Cuisine Italian Course Rice Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Difficult Others Veg Advertisment Ingredients list for Lemon Risotto 1 1/2 tablespoons Lemon juice Arborio rice 1 tablespoon Lemon zest grated 1 cup Arborio rice 1 1/2 tablespoons Olive oil 2 medium Onions diced 2 1/2 cups Vegetable stock to taste Salt 3 tablespoons Parmesan cheese grated 10-15 Broccoli cut into florets 2 cloves Garlic crushed 1 teaspoon Butter Method Advertisment Heat the oil in a non stick pan, add the onions and rice and sauté for a couple of minutes. Add the garlic and continue to sauté for another couple of minutes. Add half cup of vegetable stock, lemon zest and salt and stir. Once this stock is absorbed add more stock, cover and cook. Continue in this way till all the stock is used up. Add two tablespoons parmesan cheese and broccoli and mix. Add the lemon juice and mix. Cover and cook for two to three minutes. Add the butter and mix. Sprinkle the remaining parmesan cheese over the top and serve hot.
