Super healthy, cabbage goes a long way back. In ancient times, the Greeks treated it as a special food for its many medicinal properties. There are tales about raw cabbage juice being a standard treatment for a nasty hangover! Salads, dals, sabzis, pickles and even raitas, cabbage does full justice to each preparation. Ingredients for Leafy Greens With Apple And Caraway Vinaigrette Recipe

  • Cabbage 1 inch pieces 1/4 small

  • Iceberg Lettuce 1 medium

  • Leaf lettuce (preferably Romaine) 1 bunch

  • Spinach leaves (palak) Tender 16-20

  • Radish leaves Tender 8-10

  • Dill leaves (suva) 1/2 cup

  • Dressing

  • Caraway seeds (shahi jeera) 1 teaspoon

  • Apple juice 1/2 cup

  • Olive oil 1 tablespoon

  • Red wine vinegar 4 tablespoons

  • Paprika powder 1/4 teaspoon

  • Honey 1 teaspoon

  • Black peppercorns crushed 1/2 teaspoon

  • Salt to taste

Method

Step 1

Roast the caraway seeds on a dry tawa, cool and crush well. Mix caraway seeds, apple juice, olive oil, red wine vinegar, paprika, honey, crushed peppercorns and salt in a bottle, close tightly and shake well. Refrigerate till you require.

Step 2

Trim and refresh iceberg lettuce, leaf lettuce, tender spinach, tender radish, dill leaves in lots of water, then trim in chilled water.

Step 3

Tear the leaves into bite size pieces, mix well and refrigerate to keep them crisp. Just before serving, pour the prepared dressing and toss. Serve cold.
