Ingredients
- 1 cup ripe jackfruit, finely chopped
- ½ cup rice flour
- ½ cup refined flour (maida)
- Salt to taste
- ¼ cup scraped fresh coconut
- ¼ cup jaggery (gur) grated
- ½ teaspoon green cardamom powder
- Oil for drizzling and greasing
Method
- Take rice flour in a bowl. Add refined flour, salt and some water and whisk to make a semi-thick batter.
- Heat jackfruit in a non-stick pan. Add coconut and jaggery, mix and cook for 1 minute.
- Add 1 tablespoon of water, mix and cook till the jaggery melts. Add cardamom powder and mix.
- Heat a non-stick pan. Grease with some oil and pour a ladleful of batter and swirl to make a thin disc. Drizzle some oil on top and roast from both sides till golden. Use up the remaining batter similarly.
- Transfer on individual serving plates, put some jackfruit mixture on one side of the disc and wrap.
- Serve hot.
