Ingredients
- 2 medium green apples
- 1/2 cup green peas
- 2 small onions
- 2 small potatoes
- 1-2 green chillies
- 1 teaspoon butter
- Basil 6-8 leaves + a sprigs
- Salt to taste
- 1 cup milk
- 1 tablespoon lemon juice
Method
- Roast green apples, onions, potatoes, green chillies and lemon on the barbecue.
- Heat butter in a pan, add green peas and sauté.
- Halve the roasted apples and remove the pips.
- Halve the onions and potatoes. Put onion, green apples, potatoes, green chillies and green peas in a blender and blend. Add the sautéed green peas and continue to blend adding water as required.
- Add basil leaves and blend some more.
- Transfer into a pan. Add salt and mix. Add milk and mix. Bring the mixture to a boil.
- Add lemon juice and mix. Serve hot garnished with a sprig of basil.
