By Sanjeev Kapoor 05 May 2016 in Recipes Course New Update Main Ingredients Basmati Rice, Carrots Cuisine Indian Course Rice Prep Time 31-40 minutes Cook time 26-30 minutes Serve 4 Taste Tangy Level of Cooking Moderate Others Veg Advertisment Ingredients list for Gajar Tamatar Pulao 1 1/2 cups Basmati Rice 2 medium Carrots 1/2 inch cubes 2 medium Tomatoes chopped 1 Bay leaf 1 inch stick Cinnamon 2 Black cardamoms 1 inch piece Ginger chopped 7-8 Sambhar onions to taste Salt 6-7 Curry leaves 2 teaspoons Raisins 1/2 teaspoon Black peppercorns crushed 1 cup Tomato puree 1 teaspoon Lemon juice 2 tablespoons Fresh coriander leaves chopped Method Advertisment Soak rice in three cups of water for half an hour. Drain and set aside. Heat a non-stick pan and dry roast bay leaf, cinnamon and black cardamoms. Add ginger, sambhar onions, chopped tomatoes, carrot cubes and salt. Sauté for two to three minutes. Add three cups of water and stir. Bring to a boil and add curry leaves, drained rice, raisins, black peppercorns and tomato puree, stirring gently continuously. Mix in lemon juice and chopped coriander leaves. Cover and cook on low heat till done. Serve hot.
