If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Gajar Aur Tamatar Ka Shorba Recipe

  • Carrot 2 medium

  • Tomatoes 3 medium

  • Potatoes 4 small

  • Butter 1 tablespoon

  • Ginger 1 inch piece

  • Coriander stems 8-10

  • Black peppercorns 6-8

  • Salt to taste

  • Vegetable stock 3 cups


Step 1

Heat a pressure cooker. Diagonally slice carrots and roughly chop tomatoes and put them into the cooker.

Step 2

Chop potatoes and ginger and add. Add butter. Add fresh coriander stems, black peppercorns, salt, vegetable stock.

Step 3

Close the lid of the cooker and cook under pressure till 4 whistles are given out. When the pressure reduces, open the lid and strain some of the stock into a bowl.

Step 4

Blend the rest in the cooker with a hand blender. Add the strained stock and blend again.

Step 5

Strain the soup into a deep bowl, then pour into soup cups and serve piping hot.
